Directions
PREHEAT large non-stick skillet for 1 minute over medium heat.
ADD the shrimp and sauté for 2 minutes. Add snow peas and red peppers to shrimp and continue sautéing for 6 to 7 minutes or until shrimp are fully cooked.
REMOVE from stove and serve over cooked rice.
From Amanda K.: We prefer to serve this over pasta noodles (and it holds up better for leftovers, too!).

1 1/2 cups fresh snow peas
1 1/2 cups red pepper, chopped
2 1/2 cups rice, cooked
