Piña Colada Shrimp Salad

Garlic Herb Marinated Shrimp

Prep Time:

12 minutes (+ 1 hr to chill before serving)

Cook Time:

10 minutes

Makes:

4 entrées or 8 side salads


Directions

PREPARE shrimp according to package directions. Spread cooked shrimp out onto a plate and place plate in the refrigerator to cool shrimp for 10 minutes.

PLACE colander of cooked pasta under cool running water until pasta is cooled. Drain well and pour pasta into a large bowl.

ADD shrimp, pineapple, coconut and mayonnaise to the bowl with shrimp. Stir until all ingredients are incorporated.

COVER bowl and chill salad at least 1 hour before serving.
