Clam and Asparagus Linguine
1 pkg SeaPak® Clam Strips (12 oz)
1 lb uncooked linguini
1 lb asparagus, trimmed and cut into 2-inch pieces
½ cup butter
3 cloves garlic, minced
Juice of 1 lemon
¼ cup fresh parsley leaves
Cook clam strips according to package directions.
Cook linguini according to package directions, adding asparagus during last 3 minutes of cooking. Drain, and keep warm.
Melt butter in a large skillet over medium heat; add garlic. Sauté 1 minute. Remove from heat and add lemon juice. Add cooked pasta and asparagus, tossing to coat.
To serve, divide pasta and asparagus evenly between serving bowls. Top with clam strips and parsley. Serve with lemon wedges.
