Hot and Cheesy Spinach and Shrimp Dip
1/3 18 oz package SeaPak® Popcorn Shrimp
2 packages (10 oz) frozen chopped spinach, thawed and excess water squeezed out
1/2 cup mayonnaise
1/2 cup sour cream
2 cups shredded Monterrey Jack cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tsp hot sauce
Freshly ground black pepper
Crackers or toasted French bread slices
Prepare popcorn shrimp according to package directions and keep warm.
Preheat oven to 325ºF.
Prepare a casserole dish with non-stick cooking spray and set aside.
In a large mixing bowl, stir together the spinach, mayonnaise, sour cream, jack cheese, Parmesan cheese, garlic and hot sauce.
Salt and pepper to taste.
Spoon mixture into the prepared casserole dish and bake until bubbly and heated through (approximately 25 minutes).
Top with the warm shrimp and serve immediately with crackers or toasted bread slices.
