Salmon Burger Lime and Avocado Salad
1 14.4 oz package SeaPak® Lighthouse Selections Salmon Burgers
Juice of 2 limes
1 tsp olive oil
1/4 medium red onion, diced
1 medium tomato, diced
1 medium avocado, seed removed, peeled, and diced
1 jalapeño pepper, seeds removed and diced finely
1 tbsp coarsely chopped cilantro
Kosher salt and black pepper to taste
Cook shrimp burgers according to package directions. Let cool and dice patties.
In a large bowl, whisk together the lime juice and olive oil.
Combine the diced red onion, shrimp burgers, tomato, avocado, and jalapeño and gently toss.
Add the cilantro and gently toss.
Add salt and pepper to taste.
