Shrimp, Artichoke, and Spinach Dip
1 pkg SeaPak® Shrimp Scampi (12 oz)
1 block cream cheese (8 oz), softened
½ cup mayonnaise
1 cup shredded Parmesan cheese, divided
1 pkg frozen chopped spinach (10 oz), thawed and squeezed dry
1 can artichoke hearts (14 oz), drained and coarsely chopped
2 cloves garlic, minced
Preheat oven to 400°F. Sauté shrimp according to package directions. Coarsely chop.
Blend cream cheese, mayonnaise, and ½ cup Parmesan cheese in a medium bowl. Fold in shrimp, spinach, artichoke hearts, and garlic. Spoon into a 2-quart baking dish. Sprinkle with remaining cheese.
Bake 25 to 30 minutes or until browned and bubbly. Serve with pita chips.
