Spicy Shrimp and Grits
1 12 oz package SeaPak® Shrimp Scampi
1 1/2 cups quick grits
1 (10 ounce) can diced tomatoes and green chilies, undrained
1 cup grated parmesan cheese
Cook grits and shrimp scampi according to package directions.
Add 1/4 cups water a medium skillet on high heat. When the water begins to boil (about 5 minutes) reduce the heat to low and stir in the diced tomatoes and green chilies.
Mix in cooked grits and shrimp scampi and top with cheese. Cover (you can use aluminum foil here if you don't have a lid for your skillet) and heat over low for 3 additional minutes.
Remove from heat and serve from the skillet.
