Summer Shrimp Scampi
2 (12 ounce) packages SeaPak Shrimp Scampi
12 ounces dry penne
1 cup halved grape or cherry tomatoes
1 cup corn, fresh or frozen
1/4 teaspoon crushed red pepper flakes or to taste
1/4 cup thinly sliced fresh basil
1/4 cup shaved or grated Parmesan cheese, plus additional for garnish if desired
Cook penne about 1-minute shy of the package directions.
Meanwhile, place a 12" to 14" skillet over MEDIUM-HIGH heat. Add frozen SeaPak Shrimp Scampi in an even layer. Cook, stirring, for about 4 minutes. Add tomatoes, corn, and crushed red pepper flakes.
Cook and stir for an additional 3 or 4 minutes, or until tomatoes have softened and shrimp is fully cooked through.
Remove from heat and stir in basil and sprinkle with Parmesan. Stir in cooked penne.
Serve with additional Parmesan for garnish, if desired.
