Tuscan Shrimp Scampi Pasta Bowl
1 pkg SeaPak Shrimp Scampi (12 oz)
8 oz linguine
1 cup broccoli florets, fresh or frozen
½ red bell pepper, thinly sliced
1 small zucchini, sliced
1 cup halved grape tomatoes
5 cups fresh spinach
½ cup shredded Parmesan cheese
Fresh basil for garnish
Cook pasta according to package directions, adding broccoli, bell pepper, and zucchini during last 3 minutes of cooking. Drain pasta and vegetables, reserving ¼ cup pasta water.
Meanwhile, cook Shrimp Scampi according to package directions. Stir in tomatoes, spinach, pasta, and vegetables, and stir until spinach wilts slightly. Stir in pasta water if necessary to reach desired consistency.
Divide pasta between 4 serving plates or bowls. Top each serving with Parmesan cheese, and garnish with fresh basil, if desired.
